Our team, led by Chef Henlu Van Nieuwenhuizen anchors our culinary philosophy directly in the landscape, creating a dialogue between fine dining craft and the raw abundance of the Soutpansberg.

Here, five-star dining strips away the traditional white tablecloths to focus on connection to the environment. It is the discipline of world-class culinary technique applied to ingredients harvested from our soil that same morning. We believe true luxury is a dish that holds the flavours of the earth it came from.

Farm-to-table

Our farm-to-table approach means the distance from soil to plate is measured in footsteps. We harvest vegetables from our own gardens and forage the tree line and the rocky outcrops for indigenous herbs, fresh wildflowers and baobab leaves. For ingredients we cannot grow ourselves, we source from nearby farms, supporting the regional economy.

Our kitchen operates on a strict zero-waste philosophy. A dedicated colony of soldier flies efficiently converts our organic waste into nutrient-rich compost, feeding the earth that grew the food.

Our kitchen is led by chefs who trained in some of the finest rooms in the world and chose, instead, to cook in one of its wildest. They forage, they garden, they tend the fire — and they would tell you the ingredients do most of the work.

Whether you require a strict vegan or kosher menu or travel with a picky eater, our kitchen prepares delicious meals carefully catering to every guest’s dietary preferences and tailored to the environment.
